4 Surprise Way Palak Recipes - Dosa, Sabji, Dal & Multipurpose Curry

Ingredients:

For Dosa:

  1. 2 cups rice
  2. 1/2 cup urad dal
  3. 1/2 teaspoon fenugreek seeds
  4. Salt to taste

For Sabji (Vegetable Curry):

  1. Assorted vegetables (potatoes, carrots, peas, etc.), diced
  2. 1 onion, finely chopped
  3. 1 tomato, chopped
  4. 1/2 cup green beans, chopped
  5. 1/2 cup cauliflower florets
  6. 1/2 cup green peas
  7. 2 tablespoons oil
  8. 1 teaspoon mustard seeds
  9. 1 teaspoon cumin seeds
  10. 1/2 teaspoon turmeric powder
  11. 1 teaspoon red chili powder
  12. Salt to taste
  13. Fresh coriander leaves for garnish

For Dal:

  1. 1 cup split yellow lentils (toor dal)
  2. 1 tomato, chopped
  3. 1 onion, chopped
  4. 2 green chilies, chopped
  5. 1 teaspoon ginger-garlic paste
  6. 1/2 teaspoon turmeric powder
  7. 1 teaspoon cumin seeds
  8. 1/2 teaspoon mustard seeds
  9. 2 tablespoons oil
  10. Salt to taste
  11. Fresh coriander leaves for garnish

For Multipurpose Curry:

  1. 1 cup yogurt
  2. 1 tablespoon gram flour (besan)
  3. 1/2 teaspoon turmeric powder
  4. 1/2 teaspoon cumin powder
  5. 1/2 teaspoon coriander powder
  6. Salt to taste
  7. 1 tablespoon oil
  8. 1/2 teaspoon mustard seeds
  9. Curry leaves for flavor

Steps:

Dosa: Step 1: Soak rice, urad dal, and fenugreek seeds together for at least 6 hours. Grind to a smooth batter, add salt, and let it ferment for 8 hours.

Step 2: Heat a dosa pan, pour a ladle of batter, and spread it thin. Cook until crispy.

Sabji (Vegetable Curry): Step 3: In a pan, heat oil, add mustard seeds, cumin seeds, and let them splutter. Add onions, tomatoes, and sauté until soft.

Step 4: Add assorted vegetables, turmeric powder, red chili powder, and salt. Cook until the vegetables are tender. Garnish with coriander leaves.

Dal: Step 5: Boil toor dal with turmeric, salt, and water until soft.

Step 6: In a pan, heat oil, add mustard seeds, cumin seeds, onions, green chilies, ginger-garlic paste, and sauté. Add tomatoes, cook until soft, then add the cooked dal. Garnish with coriander leaves.

Multipurpose Curry: Step 7: Whisk yogurt with gram flour, turmeric powder, cumin powder, coriander powder, and salt.

Step 8: In a pan, heat oil, add mustard seeds, curry leaves, and let them splutter. Pour in the yogurt mixture and cook until it thickens.

Serve the crispy dosa with sabji, dal, and multipurpose curry for a wholesome and flavorful meal that celebrates diverse tastes and textures. Enjoy!
