Ingredients:

  1. Rolled oats (1 cup)
  2. Mixed vegetables (1 cup, finely chopped - carrots, peas, beans, etc.)
  3. Boiled potatoes (2 medium, mashed)
  4. Onion (1, finely chopped)
  5. Green chili (1, finely chopped)
  6. Ginger-garlic paste (1 teaspoon)
  7. Turmeric powder (1/2 teaspoon)
  8. Garam masala (1/2 teaspoon)
  9. Coriander powder (1 teaspoon)
  10. Cumin powder (1/2 teaspoon)
  11. Fresh coriander leaves (a handful, chopped)
  12. Salt and pepper (to taste)
  13. Olive oil (1 tablespoon, for brushing)
  14. Breadcrumbs (1/2 cup, for coating)

Preparation Steps:

  1. Prepare Oats:
    • Dry roast the rolled oats in a pan until they become slightly golden. Allow them to cool and then grind them into a coarse powder.
  2. Mix Ingredients:
    • In a large bowl, combine the ground oats, mashed boiled potatoes, finely chopped mixed vegetables, chopped onion, green chili, ginger-garlic paste, turmeric powder, garam masala, coriander powder, cumin powder, chopped coriander leaves, salt, and pepper.
  3. Form Cutlets:
    • Mix the ingredients thoroughly and shape the mixture into flat, round cutlets.
  4. Coat with Breadcrumbs:
    • Roll each cutlet in breadcrumbs, ensuring an even coating.
  5. Bake or Pan-Cook:
    • For a healthier option, you can either bake the cutlets in a preheated oven at 375°F (190°C) for about 20-25 minutes or pan-cook them until golden brown on both sides with a little olive oil.
  6. Serve:
    • Serve the healthy oats cutlets hot with your favorite chutney or yogurt dip.
