Ingredients:
For the Spicy Maple Carrots:
- Carrots (1 lb, peeled and sliced into sticks)
- Maple syrup (2 tablespoons)
- Olive oil (2 tablespoons)
- Smoked paprika (1 teaspoon)
- Chili powder (1/2 teaspoon)
- Cumin powder (1/2 teaspoon)
- Salt and pepper (to taste)
For the Crispy Chickpeas:
- Chickpeas (1 can, drained and rinsed)
- Olive oil (2 tablespoons)
- Cumin powder (1 teaspoon)
- Smoked paprika (1/2 teaspoon)
- Cayenne pepper (1/4 teaspoon, optional for extra heat)
- Salt and pepper (to taste)
For the Yogurt Sauce:
- Greek yogurt (1/2 cup)
- Lemon juice (1 tablespoon)
- Garlic (1 clove, minced)
- Fresh dill or parsley (1 tablespoon, chopped)
- Salt and pepper (to taste)
Preparation Steps:
Spicy Maple Carrots:
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together maple syrup, olive oil, smoked paprika, chili powder, cumin powder, salt, and pepper.
- Toss carrot sticks in the maple mixture until well coated.
- Spread the carrots on a baking sheet in a single layer and roast for 20-25 minutes or until tender and caramelized.
Crispy Chickpeas:
- Preheat the oven to 400°F (200°C).

Yogurt Sauce:
- In a bowl, mix together Greek yogurt, lemon juice, minced garlic, chopped dill or parsley, salt, and pepper.
