Ingredients:

For the Spicy Maple Carrots:

  1. Carrots (1 lb, peeled and sliced into sticks)
  2. Maple syrup (2 tablespoons)
  3. Olive oil (2 tablespoons)
  4. Smoked paprika (1 teaspoon)
  5. Chili powder (1/2 teaspoon)
  6. Cumin powder (1/2 teaspoon)
  7. Salt and pepper (to taste)

For the Crispy Chickpeas:

  1. Chickpeas (1 can, drained and rinsed)
  2. Olive oil (2 tablespoons)
  3. Cumin powder (1 teaspoon)
  4. Smoked paprika (1/2 teaspoon)
  5. Cayenne pepper (1/4 teaspoon, optional for extra heat)
  6. Salt and pepper (to taste)

For the Yogurt Sauce:

  1. Greek yogurt (1/2 cup)
  2. Lemon juice (1 tablespoon)
  3. Garlic (1 clove, minced)
  4. Fresh dill or parsley (1 tablespoon, chopped)
  5. Salt and pepper (to taste)

Preparation Steps:

Spicy Maple Carrots:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together maple syrup, olive oil, smoked paprika, chili powder, cumin powder, salt, and pepper.
  3. Toss carrot sticks in the maple mixture until well coated.
  4. Spread the carrots on a baking sheet in a single layer and roast for 20-25 minutes or until tender and caramelized.

Crispy Chickpeas:

  1. Preheat the oven to 400°F (200°C).
