Ingredients:

  1. Breakfast sausage patties (6-8, cooked according to package instructions and crumbled)

For Assembly:

  1. Eggs (6-8, scrambled)
  2. Shredded cheddar cheese (1 cup)
  3. Salt and pepper (to taste)
  4. Cooking spray or melted butter (for greasing muffin cups)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare Pancake Batter:
    • Prepare pancake batter according to the package instructions. Set aside.
  3. Cook Sausage Patties:
    • Cook the breakfast sausage patties according to the package instructions. Once cooked, crumble them into smaller pieces.
  4. Scramble Eggs:
    • Scramble the eggs in a bowl and season with salt and pepper to taste. Cook the scrambled eggs in a skillet until just set.
  5. Grease Muffin Cups:
    • Grease the cups of a muffin tin with cooking spray or melted butter.
  6. Assemble Muffin Cups:
    • Spoon a small amount of pancake batter into each muffin cup, covering the bottom. Add a layer of crumbled sausage, scrambled eggs, and shredded cheddar cheese.
  7. Repeat Layers:
    • Repeat the layers, finishing with a dollop of pancake batter on top.
  8. Bake:
    • Bake in the preheated oven for 15-18 minutes or until the pancake is cooked through and golden brown.
  9. Serve:
    • Allow the Pancake Sausage Muffin Cups to cool slightly before removing them from the muffin tin. Serve with maple syrup if desired.
