Rose Shrimp Pasta

Ingredients:

  1. Shrimp (1 pound, peeled and deveined)
  2. Linguine or fettuccine pasta (12 ounces)
  3. Olive oil (2 tablespoons)
  4. Garlic (3 cloves, minced)
  5. Crushed red pepper flakes (1/2 teaspoon, optional)
  6. Cherry tomatoes (1 cup, halved)
  7. Tomato paste (2 tablespoons)
  8. Dry rosé wine (1 cup)
  9. Heavy cream (1/2 cup)
  10. Salt (to taste)
  11. Black pepper (to taste)
  12. Fresh basil or parsley (for garnish)
  13. Grated Parmesan cheese (for serving)

Instructions:

  1. Cook Pasta:
    • Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
  2. Sauté Shrimp:
    • In a large skillet, heat olive oil over medium heat. Add minced garlic and crushed red pepper flakes (if using). Sauté for about 1 minute until fragrant.
  3. Add Shrimp:
    • Add the peeled and deveined shrimp to the skillet. Cook for 2-3 minutes per side or until they turn pink and opaque. Remove shrimp from the skillet and set aside.
  4. Sauté Tomatoes:
    • In the same skillet, add halved cherry tomatoes. Sauté for 2-3 minutes until they begin to soften.
  5. Add Tomato Paste:
    • Stir in tomato paste and cook for an additional 1-2 minutes.
  6. Deglaze with Rosé Wine:
    • Pour in the dry rosé wine to deglaze the skillet. Scrape any browned bits from the bottom of the pan.
  7. Simmer and Add Cream:
    • Allow the wine to simmer for a few minutes until it reduces slightly. Then, add heavy cream and season with salt and black pepper. Stir to combine.
  8. Combine Shrimp and Pasta:
    • Return the cooked shrimp to the skillet, allowing them to heat through in the sauce.
  9. Add Pasta:
    • Add the cooked pasta to the skillet, tossing to coat it evenly with the rosé shrimp sauce.
  10. Garnish and Serve:
    • Garnish the dish with fresh basil or parsley. Serve the Rosé Shrimp Pasta hot, with a sprinkle of grated Parmesan cheese on top.
