Rose Shrimp Pasta

Ingredients:
- Shrimp (1 pound, peeled and deveined)
- Linguine or fettuccine pasta (12 ounces)
- Olive oil (2 tablespoons)
- Garlic (3 cloves, minced)
- Crushed red pepper flakes (1/2 teaspoon, optional)
- Cherry tomatoes (1 cup, halved)
- Tomato paste (2 tablespoons)
- Dry rosé wine (1 cup)
- Heavy cream (1/2 cup)
- Salt (to taste)
- Black pepper (to taste)
- Fresh basil or parsley (for garnish)
- Grated Parmesan cheese (for serving)
Instructions:
- Cook Pasta:
- Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
- Sauté Shrimp:
- In a large skillet, heat olive oil over medium heat. Add minced garlic and crushed red pepper flakes (if using). Sauté for about 1 minute until fragrant.
- Add Shrimp:
- Add the peeled and deveined shrimp to the skillet. Cook for 2-3 minutes per side or until they turn pink and opaque. Remove shrimp from the skillet and set aside.
- Sauté Tomatoes:
- In the same skillet, add halved cherry tomatoes. Sauté for 2-3 minutes until they begin to soften.
- Add Tomato Paste:
- Stir in tomato paste and cook for an additional 1-2 minutes.
- Deglaze with Rosé Wine:
- Pour in the dry rosé wine to deglaze the skillet. Scrape any browned bits from the bottom of the pan.
- Simmer and Add Cream:
- Allow the wine to simmer for a few minutes until it reduces slightly. Then, add heavy cream and season with salt and black pepper. Stir to combine.
- Combine Shrimp and Pasta:
- Return the cooked shrimp to the skillet, allowing them to heat through in the sauce.
- Add Pasta:
- Add the cooked pasta to the skillet, tossing to coat it evenly with the rosé shrimp sauce.
- Garnish and Serve:
- Garnish the dish with fresh basil or parsley. Serve the Rosé Shrimp Pasta hot, with a sprinkle of grated Parmesan cheese on top.
