Ingredients:

  1. Semolina (Suji/Rawa) - 1 cup
  2. Ghee (Clarified Butter) - 1/2 cup
  3. Sugar - 1/2 cup (adjust according to taste)
  4. Water - 2 cups
  5. Cardamom powder - 1/2 teaspoon
  6. Nuts (almonds, cashews, raisins) - for garnish

Preparation Steps:

  1. Roast Semolina:
    • In a pan, heat ghee over medium heat. Add semolina and roast it on low to medium heat until it turns golden brown. Stir continuously to avoid burning.
  2. Prepare Sugar Syrup:
    • In a separate pot, heat water. Add sugar and cardamom powder to the boiling water, stirring until the sugar dissolves. This creates a sugar syrup.
  3. Combine Semolina and Sugar Syrup:
    • Slowly add the roasted semolina to the sugar syrup, stirring continuously to avoid lumps. Be cautious as the mixture may splutter.
  4. Cook and Stir:
    • Cook the mixture on low heat, stirring continuously to prevent sticking. The semolina will absorb the sugar syrup.
  5. Garnish:
    • Once the semolina absorbs the sugar syrup and reaches a halwa-like consistency, add chopped nuts and continue stirring.
  6. Check Consistency:
    • The Suji Ka Halwa is ready when it starts to leave the sides of the pan and ghee separates.
  7. Serve:
    • Remove from heat and transfer the Suji Ka Halwa to a serving dish.
  8. Garnish and Enjoy:
    • Garnish with additional nuts and serve the Suji Ka Halwa warm. It can be enjoyed on its own or paired with poori for a classic combination.
