Giant Biscoff Biscuit

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Biscoff spread for filling (optional)
  • Additional Biscoff cookies for decoration

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, ground cinnamon, and salt. Set aside.
  3. In a large bowl, cream together softened butter and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, beating until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Divide the dough in half and shape each half into a large disc.
  7. Place one disc on the prepared baking sheet and press it into a round shape, about 1/2 inch thick.
  8. Optionally, spread a layer of Biscoff spread over the surface of the pressed dough.
  9. Take the second disc of dough and place it on top, pressing the edges together to seal.
  10. Use additional Biscoff cookies to create a decorative pattern on top of the giant biscuit.
  11. Bake in the preheated oven for 20-25 minutes or until the edges are golden brown.
  12. Allow the Giant Biscoff Biscuit to cool on the baking sheet before transferring it to a wire rack.
  13. Once completely cooled, slice and share this delightful oversized Biscoff treat.
