Easy and Quick Oatmeal Savory Scones

Ingredients:

  • 1 cup rolled oats
  • 1 and 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh herbs (such as thyme, rosemary, or chives), finely chopped
  • 1/2 cup buttermilk
  • 1 large egg, beaten (for egg wash)

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, pulse the rolled oats until they resemble coarse flour.
  3. In a large bowl, combine the oat flour, all-purpose flour, baking powder, baking soda, and salt.
  4. Add the cold, diced butter to the dry ingredients. Using a pastry cutter or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs.
  5. Stir in the shredded cheddar cheese, grated Parmesan cheese, and finely chopped fresh herbs.
  6. Make a well in the center of the mixture and pour in the buttermilk. Mix until just combined, being careful not to overmix.
  7. Turn the dough out onto a floured surface and gently knead a few times until it comes together.
  8. Pat the dough into a circle about 1 inch thick.
  9. Use a sharp knife to cut the circle into wedges, similar to slicing a pizza.
  10. Transfer the scones to the prepared baking sheet, leaving space between each.
  11. Brush the tops of the scones with beaten egg to give them a golden finish.
  12. Bake in the preheated oven for 15-18 minutes or until the scones are golden brown and cooked through.
  13. Allow the oatmeal savory scones to cool on a wire rack before serving.
