Easy and Quick Oatmeal Savory Scones
Ingredients:
- 1 cup rolled oats
- 1 and 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh herbs (such as thyme, rosemary, or chives), finely chopped
- 1/2 cup buttermilk
- 1 large egg, beaten (for egg wash)
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a food processor, pulse the rolled oats until they resemble coarse flour.
- In a large bowl, combine the oat flour, all-purpose flour, baking powder, baking soda, and salt.
- Add the cold, diced butter to the dry ingredients. Using a pastry cutter or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs.
- Stir in the shredded cheddar cheese, grated Parmesan cheese, and finely chopped fresh herbs.
- Make a well in the center of the mixture and pour in the buttermilk. Mix until just combined, being careful not to overmix.
- Turn the dough out onto a floured surface and gently knead a few times until it comes together.
- Pat the dough into a circle about 1 inch thick.
- Use a sharp knife to cut the circle into wedges, similar to slicing a pizza.
- Transfer the scones to the prepared baking sheet, leaving space between each.
- Brush the tops of the scones with beaten egg to give them a golden finish.
- Bake in the preheated oven for 15-18 minutes or until the scones are golden brown and cooked through.
- Allow the oatmeal savory scones to cool on a wire rack before serving.
