Diamond Lemon Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions:

  1. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  2. Add the egg, vanilla extract, lemon zest, and lemon juice to the butter-sugar mixture. Mix until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft cookie dough forms.
  5. Divide the dough into two equal portions and shape each portion into a square or rectangle.
  6. Wrap the dough portions in plastic wrap and refrigerate for at least 2 hours, or until the dough is firm.
  7. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Take one portion of the chilled dough and roll it out into a rectangle on a floured surface.
  9. Using a sharp knife, cut the rolled-out dough into diamond shapes.
  10. Place the diamond-shaped cookies on the prepared baking sheet, leaving some space between each.
  11. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  12. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  13. Dust the cooled Diamond Lemon Cookies with powdered sugar for a finishing touch.
  14. Repeat the rolling, cutting, and baking process with the second portion of the dough.
