Diamond Lemon Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Zest of 2 lemons
- 2 tablespoons fresh lemon juice
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions:
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, lemon zest, and lemon juice to the butter-sugar mixture. Mix until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft cookie dough forms.
- Divide the dough into two equal portions and shape each portion into a square or rectangle.
- Wrap the dough portions in plastic wrap and refrigerate for at least 2 hours, or until the dough is firm.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Take one portion of the chilled dough and roll it out into a rectangle on a floured surface.
- Using a sharp knife, cut the rolled-out dough into diamond shapes.
- Place the diamond-shaped cookies on the prepared baking sheet, leaving some space between each.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Dust the cooled Diamond Lemon Cookies with powdered sugar for a finishing touch.
- Repeat the rolling, cutting, and baking process with the second portion of the dough.
