Chocolate Strawberry Cheesecake Cups

Ingredients:

  • 1 cup chocolate cookie crumbs (for the base)
  • 4 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream or whipped topping
  • Fresh strawberries, sliced, for topping
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions:

  1. In a bowl, combine chocolate cookie crumbs and melted butter. Mix until the crumbs are evenly coated.
  2. Press the chocolate cookie mixture into the base of serving cups or glasses to form the crust.
  3. In another bowl, beat the softened cream cheese until smooth.
  4. Add granulated sugar and vanilla extract to the cream cheese. Beat until well combined and creamy.
  5. Gently fold in the whipped cream or whipped topping until the mixture is smooth and airy.
  6. Spoon or pipe the cheesecake mixture onto the chocolate crust in the serving cups.
  7. Refrigerate the cheesecake cups for at least 2-3 hours or until they are set.
  8. Just before serving, top each cheesecake cup with sliced fresh strawberries.
  9. Optionally, garnish with chocolate shavings or a dusting of cocoa powder for added decadence.
