Miniature Honey Cheese Potato
Ingredients:
- Baby potatoes (as many as desired)
- Olive oil
- Salt and pepper to taste
- Honey
- Shredded cheese (cheddar or your favorite variety)
- Fresh chives or parsley for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash and scrub the baby potatoes thoroughly. Leave the skin on for added texture.
- Place the potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat the potatoes evenly.
- Roast the potatoes in the preheated oven for approximately 20-25 minutes or until they are tender and golden brown. Make sure to toss them halfway through for even cooking.
- Once the potatoes are cooked, remove them from the oven.
- Using a knife or fork, make a small cross-cut on the top of each potato.
- Drizzle a small amount of honey into each cut potato.
- Sprinkle a generous amount of shredded cheese over the honey-drizzled potatoes.
- Place the potatoes back in the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.
- Optional: Garnish with fresh chives or parsley for added freshness and color.
