Miniature Honey Cheese Potato

Ingredients:

  • Baby potatoes (as many as desired)
  • Olive oil
  • Salt and pepper to taste
  • Honey
  • Shredded cheese (cheddar or your favorite variety)
  • Fresh chives or parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the baby potatoes thoroughly. Leave the skin on for added texture.
  3. Place the potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat the potatoes evenly.
  4. Roast the potatoes in the preheated oven for approximately 20-25 minutes or until they are tender and golden brown. Make sure to toss them halfway through for even cooking.
  5. Once the potatoes are cooked, remove them from the oven.
  6. Using a knife or fork, make a small cross-cut on the top of each potato.
  7. Drizzle a small amount of honey into each cut potato.
  8. Sprinkle a generous amount of shredded cheese over the honey-drizzled potatoes.
  9. Place the potatoes back in the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.
  10. Optional: Garnish with fresh chives or parsley for added freshness and color.
