Strawberry Lava Cake

Ingredients:

  • 1/2 cup unsalted butter
  • 4 ounces dark chocolate, chopped
  • 2 large eggs
  • 2 egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup fresh strawberries, diced
  • Powdered sugar for dusting (optional)
  • Vanilla ice cream or whipped cream for serving (optional)

Instructions:

Step 1: Preheat your oven to 425°F (220°C). Grease and flour four ramekins.

Step 2: In a microwave-safe bowl, melt the butter and dark chocolate together in short intervals, stirring until smooth. Allow it to cool slightly.

Step 3: In a separate bowl, whisk together eggs, egg yolks, and granulated sugar until well combined.

Step 4: Pour the melted chocolate mixture into the egg mixture, stirring continuously.

Step 5: Sift in the flour and salt, folding gently until just combined.

Step 6: Add diced strawberries to the batter, gently folding them in.

Step 7: Divide the batter evenly among the prepared ramekins.

Step 8: Bake in the preheated oven for 12-14 minutes or until the edges are set, but the center is still soft.

Step 9: Allow the strawberry lava cakes to cool for a couple of minutes. Run a knife around the edges and invert each cake onto a plate.

Step 10: Optional: Dust with powdered sugar and serve with vanilla ice cream or whipped cream for a delightful finishing touch.
