Bean and Cheese Toastie

Ingredients:

  • 1 can (15 oz) of your favorite beans (kidney beans, black beans, or pinto beans), drained and rinsed
  • 1/2 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 4 slices of bread
  • 2 tablespoons olive oil or butter
  • 1 teaspoon cumin powder
  • Salt and pepper to taste
  • Optional toppings: salsa, sliced jalapeños, or fresh cilantro

Steps:

Step 1: In a bowl, mash the drained beans with a fork or potato masher.

Step 2: Mix in cumin powder, salt, and pepper to the mashed beans.
Step 3: Spread the bean mixture evenly on two slices of bread.
Step 4: Sprinkle shredded cheese over the bean mixture on each slice.

Step 5: Top with the remaining slices of bread to form sandwiches.
