Bean and Cheese Toastie
Ingredients:
- 1 can (15 oz) of your favorite beans (kidney beans, black beans, or pinto beans), drained and rinsed
- 1/2 cup shredded cheese (cheddar, mozzarella, or a blend)
- 4 slices of bread
- 2 tablespoons olive oil or butter
- 1 teaspoon cumin powder
- Salt and pepper to taste
- Optional toppings: salsa, sliced jalapeños, or fresh cilantro
Steps:
Step 1: In a bowl, mash the drained beans with a fork or potato masher.
Step 2: Mix in cumin powder, salt, and pepper to the mashed beans.
Step 3: Spread the bean mixture evenly on two slices of bread.
Step 4: Sprinkle shredded cheese over the bean mixture on each slice.
Step 5: Top with the remaining slices of bread to form sandwiches.
Step 6: Heat olive oil or butter in a pan over medium heat.
Step 7: Place the sandwiches in the pan and toast on both sides until the bread is golden brown, and the cheese is melted.
Step 8: Optional: Slice the sandwiches diagonally and serve with toppings like salsa, sliced jalapeños, or fresh cilantro.
