Artichoke Spinach Dip Pasta

Ingredients:

  • 8 ounces (about 225g) penne or your favorite pasta
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 1 cup fresh spinach, chopped
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Red pepper flakes for a hint of spice (optional)
  • Fresh parsley for garnish

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until they become translucent.
  3. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the chopped artichoke hearts and cook for another 2-3 minutes.
  5. Add chopped spinach to the skillet and cook until wilted.
  6. In a bowl, mix together cream cheese, mayonnaise, and sour cream until smooth.
  7. Add the cream cheese mixture to the skillet, stirring well to combine with the vegetables.
  8. Fold in shredded mozzarella and grated Parmesan cheeses until melted and creamy.
  9. Season the mixture with salt, black pepper, and red pepper flakes if using.
  10. Add the cooked pasta to the skillet, tossing to coat evenly with the creamy artichoke spinach mixture.
  11. Cook for a few more minutes until everything is well combined and heated through.
  12. Garnish with fresh parsley before serving.
