Artichoke Spinach Dip Pasta

Ingredients:
- 8 ounces (about 225g) penne or your favorite pasta
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 ounces) artichoke hearts, drained and chopped
- 1 cup fresh spinach, chopped
- 8 ounces cream cheese, softened
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Red pepper flakes for a hint of spice (optional)
- Fresh parsley for garnish
Instructions:
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until they become translucent.
- Add minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the chopped artichoke hearts and cook for another 2-3 minutes.
- Add chopped spinach to the skillet and cook until wilted.
- In a bowl, mix together cream cheese, mayonnaise, and sour cream until smooth.
- Add the cream cheese mixture to the skillet, stirring well to combine with the vegetables.
- Fold in shredded mozzarella and grated Parmesan cheeses until melted and creamy.
- Season the mixture with salt, black pepper, and red pepper flakes if using.
- Add the cooked pasta to the skillet, tossing to coat evenly with the creamy artichoke spinach mixture.
- Cook for a few more minutes until everything is well combined and heated through.
- Garnish with fresh parsley before serving.
