Healthy Coconut Dry Fruit Barfi

Ingredients:

  • 2 cups desiccated coconut
  • 1 cup mixed dry fruits (almonds, cashews, pistachios), finely chopped
  • 1/2 cup dates, pitted and chopped
  • 1/4 cup raisins
  • 1/4 cup dried figs (anjeer), chopped
  • 1/4 cup unsweetened khoya (mawa)
  • 1/4 cup honey or jaggery syrup
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • Ghee for greasing

Instructions:

  1. In a pan, lightly roast the desiccated coconut over medium heat until it becomes aromatic and starts to turn golden brown. Set aside.
  2. In the same pan, add a teaspoon of ghee and sauté the chopped mixed dry fruits until they are lightly roasted. Remove from heat and set aside.
  3. In a food processor, blend the dates, raisins, dried figs, and unsweetened khoya to form a sticky paste.
  4. In a mixing bowl, combine the roasted desiccated coconut, sautéed dry fruits, date-fig paste, honey or jaggery syrup, cardamom powder, and saffron strands if using. Mix well to form a cohesive mixture.
  5. Grease a plate or tray with ghee and transfer the mixture onto it. Press it down evenly to form a smooth layer.
  6. Allow the mixture to set at room temperature for a few hours or refrigerate for quicker setting.
  7. Once set, cut the mixture into squares or diamond shapes to form Healthy Coconut Dry Fruit Barfi.
  8. Serve and enjoy this nutritious and guilt-free sweet treat!
