Healthy Coconut Dry Fruit Barfi
Ingredients:
- 2 cups desiccated coconut
- 1 cup mixed dry fruits (almonds, cashews, pistachios), finely chopped
- 1/2 cup dates, pitted and chopped
- 1/4 cup raisins
- 1/4 cup dried figs (anjeer), chopped
- 1/4 cup unsweetened khoya (mawa)
- 1/4 cup honey or jaggery syrup
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- Ghee for greasing
Instructions:
- In a pan, lightly roast the desiccated coconut over medium heat until it becomes aromatic and starts to turn golden brown. Set aside.
- In the same pan, add a teaspoon of ghee and sauté the chopped mixed dry fruits until they are lightly roasted. Remove from heat and set aside.
- In a food processor, blend the dates, raisins, dried figs, and unsweetened khoya to form a sticky paste.
- In a mixing bowl, combine the roasted desiccated coconut, sautéed dry fruits, date-fig paste, honey or jaggery syrup, cardamom powder, and saffron strands if using. Mix well to form a cohesive mixture.
- Grease a plate or tray with ghee and transfer the mixture onto it. Press it down evenly to form a smooth layer.
- Allow the mixture to set at room temperature for a few hours or refrigerate for quicker setting.
- Once set, cut the mixture into squares or diamond shapes to form Healthy Coconut Dry Fruit Barfi.
- Serve and enjoy this nutritious and guilt-free sweet treat!
