The Best Coffee Cake
Ingredients:
For the Cake:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup sour cream
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
For the Streusel Topping:
- 1 cup brown sugar, packed
- 1 cup chopped nuts (walnuts or pecans)
- 2 teaspoons ground cinnamon
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
- In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with sour cream. Begin and end with the dry ingredients. Mix until just combined.
- In a small bowl, mix together the streusel topping ingredients: brown sugar, chopped nuts, and ground cinnamon.
- Spread half of the cake batter into the prepared pan. Sprinkle half of the streusel mixture over the batter.
- Carefully spread the remaining batter over the streusel layer and top with the remaining streusel mixture.
- Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
- Once the cake is done, allow it to cool slightly before drizzling the glaze over the top.
- Slice and serve warm or at room temperature.
