The Best Coffee Cake

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Streusel Topping:

  • 1 cup brown sugar, packed
  • 1 cup chopped nuts (walnuts or pecans)
  • 2 teaspoons ground cinnamon

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with sour cream. Begin and end with the dry ingredients. Mix until just combined.
  6. In a small bowl, mix together the streusel topping ingredients: brown sugar, chopped nuts, and ground cinnamon.
  7. Spread half of the cake batter into the prepared pan. Sprinkle half of the streusel mixture over the batter.
  8. Carefully spread the remaining batter over the streusel layer and top with the remaining streusel mixture.
  9. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  10. While the cake is baking, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
  11. Once the cake is done, allow it to cool slightly before drizzling the glaze over the top.
  12. Slice and serve warm or at room temperature.
