Classic Pancake
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1/4 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- Cooking spray or additional butter for the pan
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.
- Preheat a griddle or non-stick skillet over medium heat. Lightly coat with cooking spray or butter.
- Pour 1/4 cup portions of batter onto the griddle for each pancake.
- Cook until bubbles form on the surface of the pancakes and the edges begin to look set.
- Flip the pancakes and cook the other side until golden brown.
- Remove the pancakes from the griddle and keep warm.
- Repeat the process with the remaining batter.
- Serve the classic pancakes warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
