Smashed Chickpea & Tuna Toast

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (5 oz) tuna, drained
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons celery, finely chopped
  • Salt and black pepper to taste
  • Fresh parsley or cilantro for garnish (optional)
  • Sliced bread, toasted

Instructions:

  1. In a bowl, combine the chickpeas and tuna. Use a fork or potato masher to smash them together.
  2. Add mayonnaise, Dijon mustard, lemon juice, red onion, and celery to the chickpea and tuna mixture. Mix well.
  3. Season the mixture with salt and black pepper to taste. Adjust the seasoning as needed.
  4. Toast slices of bread to your liking.
  5. Spoon the smashed chickpea and tuna mixture onto the toasted bread, spreading it evenly.
  6. Garnish with fresh parsley or cilantro, if desired.
  7. Serve the Smashed Chickpea & Tuna Toast immediately.
