Smashed Chickpea & Tuna Toast
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (5 oz) tuna, drained
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 2 tablespoons red onion, finely chopped
- 2 tablespoons celery, finely chopped
- Salt and black pepper to taste
- Fresh parsley or cilantro for garnish (optional)
- Sliced bread, toasted
Instructions:
- In a bowl, combine the chickpeas and tuna. Use a fork or potato masher to smash them together.
- Add mayonnaise, Dijon mustard, lemon juice, red onion, and celery to the chickpea and tuna mixture. Mix well.
- Season the mixture with salt and black pepper to taste. Adjust the seasoning as needed.
- Toast slices of bread to your liking.
- Spoon the smashed chickpea and tuna mixture onto the toasted bread, spreading it evenly.
- Garnish with fresh parsley or cilantro, if desired.
- Serve the Smashed Chickpea & Tuna Toast immediately.
