Spinach Artichoke Stuffed Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup frozen chopped spinach, thawed and drained
  • 1 cup canned artichoke hearts, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for brushing
  • Paprika for garnish
  • Fresh parsley for garnish

Cooking Steps:

Step 1: Preheat the oven to 375°F (190°C).

Step 2: In a bowl, combine thawed and drained chopped spinach, chopped artichoke hearts, cream cheese, mayonnaise, shredded mozzarella, grated Parmesan, minced garlic, salt, and pepper. Mix well.

Step 3: Slice a pocket into each chicken breast, being careful not to cut through the other side.

Step 4: Stuff each chicken breast pocket with the spinach and artichoke mixture.

Step 5: Secure the openings with toothpicks if needed.

Step 6: Place the stuffed chicken breasts in a baking dish.

Step 7: Brush the chicken breasts with olive oil and sprinkle with paprika.

Step 8: Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.

Step 9: If desired, broil for an additional 2-3 minutes to brown the top.

Step 10: Garnish with fresh parsley before serving.
