Homemade Raffaello Balls

Ingredients

  1. 1 cup desiccated coconut
  2. 1/2 cup ground almonds
  3. 1/2 cup sweetened condensed milk
  4. 1/4 cup unsalted butter, melted
  5. 1/2 teaspoon almond extract
  6. Whole almonds for the centers
  7. White chocolate for coating
  8. Additional desiccated coconut for rolling

Steps

Step 1: In a bowl, combine desiccated coconut, ground almonds, sweetened condensed milk, melted butter, and almond extract. Mix until well combined.

Step 2: Take a small portion of the mixture, press a whole almond into the center, and roll it into a ball.

Step 3: Place the formed balls on a parchment-lined tray and refrigerate for about 30 minutes to firm up.

Step 4: Melt white chocolate either in a microwave or using a double boiler.

Step 5: Dip each coconut-almond ball into the melted white chocolate, ensuring it is fully coated.

Step 6: Allow any excess chocolate to drip off, then place the coated ball back onto the parchment-lined tray.

Step 7: Before the chocolate sets, sprinkle additional desiccated coconut over the top of each ball for decoration.

Step 8: Repeat the process for all the balls and refrigerate until the chocolate coating is fully set.
