Delicious Rigatoni Carbonara

Ingredients

  1. 1 lb rigatoni pasta
  2. 4 large eggs
  3. 1 cup grated Pecorino Romano cheese
  4. 1 cup grated Parmesan cheese
  5. 200g pancetta or guanciale, diced
  6. 4 cloves garlic, minced
  7. Salt and black pepper to taste
  8. Fresh parsley, chopped, for garnish

Steps

Step 1: Cook the rigatoni pasta in a large pot of salted boiling water until al dente. Reserve about 1 cup of pasta cooking water, then drain the pasta.

Step 2: In a bowl, whisk together eggs, Pecorino Romano cheese, and Parmesan cheese. Set aside.

Step 3: In a large skillet over medium heat, cook the diced pancetta or guanciale until it becomes crispy and golden brown.

Step 4: Add minced garlic to the skillet and sauté for about 1 minute until fragrant.

Step 5: Reduce the heat to low and add the cooked and drained rigatoni to the skillet, tossing to coat in the rendered fat.

Step 6: Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy carbonara sauce. Add reserved pasta cooking water gradually to achieve desired consistency.

Step 7: Season with salt and freshly ground black pepper to taste.

Step 8: Garnish with chopped fresh parsley.
