Gujarati Khichu for Breakfast

Ingredients

  1. 1 cup rice flour
  2. 2 and 1/2 cups water
  3. 1/2 teaspoon cumin seeds
  4. 1/4 teaspoon sesame seeds
  5. 1/4 teaspoon asafoetida (hing)
  6. Salt to taste
  7. 1 tablespoon oil
  8. Green chilies, finely chopped (optional, for added heat)
  9. Fresh coriander leaves, chopped (for garnish)

Steps

Step 1: In a mixing bowl, combine rice flour and water. Mix well to form a lump-free batter.

Step 2: Add cumin seeds, sesame seeds, asafoetida, and salt to the batter. Stir thoroughly.

Step 3: Heat the mixture in a non-stick pan over medium heat, stirring continuously to avoid lumps.

Step 4: Cook the mixture until it thickens and reaches a smooth consistency. Ensure it doesn't stick to the bottom.

Step 5: Once the mixture thickens, reduce the heat to low, cover, and let it steam for 4-5 minutes. Keep stirring occasionally.

Step 6: Add oil to the khichu and stir well. If using green chilies for added spice, add them at this stage.

Step 7: Continue to cook the khichu for an additional 2-3 minutes until it reaches a soft, smooth texture.

Step 8: Remove the khichu from heat and let it cool for a couple of minutes.

Step 9: Shape the khichu into small rounds or serve it in bowls.

Step 10: Garnish with chopped fresh coriander leaves.

Serve Gujarati Khichu hot, paired with oil, green chutney, or pickle for a delightful and comforting experience. Enjoy!
