Easy Lemon Cheesecake

Ingredients
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup whole milk
- 1/2 cup light brown sugar (for caramelizing)
Steps
Step 1: Preheat your oven to 325°F (163°C). Place ramekins in a baking dish and fill the dish with water halfway, creating a water bath.
Step 2: In a mixing bowl, beat cream cheese until smooth.
Step 3: Add granulated sugar, vanilla extract, and lemon zest. Mix until well combined.
Step 4: Add eggs one at a time, ensuring each is fully incorporated before adding the next.
Step 5: Pour in heavy cream and whole milk, mixing until the batter is smooth and creamy.
Step 6: Pour the cheesecake mixture into the ramekins.
Step 7: Bake in the water bath for approximately 45-50 minutes or until the center is set.
Step 8: Allow the cheesecakes to cool to room temperature, then refrigerate for at least 4 hours or overnight.
Step 9: Prior to serving, sprinkle a layer of light brown sugar on top of each cheesecake.
Step 10: Use a kitchen torch to caramelize the sugar until it forms a crispy crust.
