Blueberry Pie Bowls

Ingredients:

  • 2 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 1 package refrigerated pie crusts
  • Egg wash (1 egg beaten with 1 tablespoon water)
  • Optional: powdered sugar for dusting

Steps:

Step 1: Preheat your oven to 375°F (190°C).

Step 2: In a bowl, combine blueberries, sugar, cornstarch, and lemon juice. Mix until well coated.

Step 3: Roll out the pie crusts and cut them into circles to fit your individual bowls.

Step 4: Place a portion of the blueberry mixture into each bowl, leaving a border around the edges.

Step 5: Top each bowl with another circle of pie crust, crimping the edges to seal.

Step 6: Brush the tops with the egg wash for a golden finish.

Step 7: Cut a small slit in the center of each bowl to allow steam to escape.

Step 8: Bake for 20-25 minutes or until the crust is golden brown and the blueberry filling is bubbling.

Step 9: Allow the Blueberry Pie Bowls to cool slightly before serving. Optionally, dust with powdered sugar for an extra touch of sweetness.
