Ingredients:

  • 1 cup almonds (badam), blanched and peeled
  • 1 cup sugar
  • 1/2 cup ghee (clarified butter)
  • 1/4 cup milk
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • Chopped pistachios for garnish (optional)

Preparation Steps:

Step 1: Grind the blanched and peeled almonds into a fine paste using a blender or food processor.

Step 2: In a heavy-bottomed pan, heat ghee over medium-low heat.

Step 3: Add the almond paste to the pan and sauté it in ghee for 8-10 minutes, stirring continuously.

Step 4: Once the almond paste changes color slightly and releases a nutty aroma, add sugar and continue to cook.

Step 5: Add milk gradually, stirring continuously to avoid lumps.

Step 6: Continue cooking the mixture until it thickens and starts leaving the sides of the pan.

Step 7: Add cardamom powder and saffron strands (if using), mix well, and cook for a few more minutes.

Step 8: The Badam Pak is ready when it reaches a fudge-like consistency and starts to leave the pan.

Step 9: Grease a plate or tray with ghee and transfer the Badam Pak mixture onto it.

Step 10: Flatten and smooth the mixture evenly using a spatula.

Step 11: Optionally, garnish with chopped pistachios.

Step 12: Allow it to cool for a while, then cut it into squares or diamonds.

Step 13: Once completely cooled, store the Badam Pak in an airtight container.
