Bihari Chicken Curry
Ingredients:
For the Marinade:
- 1 kg chicken, cut into pieces
- 1 cup thick yogurt
- 2 tablespoons mustard oil
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
For the Curry:
- 2 tablespoons mustard oil
- 2 onions, finely sliced
- 2 tomatoes, finely chopped
- 1 teaspoon cumin seeds
- 2-3 green chilies, slit
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon kasuri methi (dried fenugreek leaves)
- Fresh coriander leaves for garnish
Optional:
- Squeeze of lemon juice for tanginess

Preparation Steps:
For the Marinade:
Step 1: In a large bowl, combine yogurt, mustard oil, ginger-garlic paste, turmeric powder, red chili powder, and salt.
Step 2: Add chicken pieces to the marinade, ensuring they are well-coated. Allow it to marinate for at least 2 hours or overnight in the refrigerator.
For the Curry:
Step 1: Heat mustard oil in a heavy-bottomed pan or kadai.
Step 2: Add cumin seeds and let them splutter.
Step 3: Add finely sliced onions and sauté until golden brown.
Step 4: Add chopped tomatoes and cook until they are soft and the oil separates.
Step 5: Add coriander powder, cumin powder, and garam masala. Mix well.
Step 6: Add marinated chicken pieces along with the marinade to the pan. Stir well to coat the chicken in the spices.
Step 7: Add slit green chilies and kasuri methi. Mix everything together.
Step 8: Cover the pan and let the chicken cook on low-medium heat for about 30-40 minutes or until it is tender and cooked through.
Step 9: Optionally, squeeze a bit of lemon juice for a tangy flavor.
Step 10: Garnish with fresh coriander leaves.
Step 11: Serve the Bihari Chicken Curry hot with steamed rice or Indian bread of your choice.
