Basic Madeleine

Ingredients:

  • 2/3 cup all-purpose flour
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 tablespoon lemon zest (optional)
  • A pinch of salt
  • Powdered sugar (for dusting, optional)

Preparation Steps:

Step 1: Preheat the oven to 375°F (190°C). Grease and flour Madeleine molds or use a non-stick Madeleine pan.

Step 2: In a bowl, sift together flour, baking powder, and a pinch of salt. Set aside.

Step 3: In another bowl, whisk together eggs and granulated sugar until pale and slightly thickened.

Step 4: Add vanilla extract and lemon zest (if using) to the egg mixture and mix well.

Step 5: Gradually fold in the sifted dry ingredients until just combined.

Step 6: Gently fold in the melted and cooled butter until a smooth batter forms.

Step 7: Spoon the batter into the Madeleine molds, filling each about 3/4 full.

Step 8: Bake in the preheated oven for 10-12 minutes or until the edges are golden brown and the Madeleines spring back when touched.

Step 9: Remove from the oven and let the Madeleines cool in the pan for a few minutes.

Step 10: Carefully transfer the Madeleines to a wire rack to cool completely.

Step 11: Optional: Dust with powdered sugar before serving.
