Pyaaz Ki Kachori
Ingredients:
For the Dough:
- 2 cups all-purpose flour
- 1/4 cup ghee (clarified butter)
- Water (as needed for kneading)
- A pinch of salt
For the Filling:
- 2 cups onions, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon ginger, grated
- 1 teaspoon green chilies, finely chopped
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil for sautéing
For Deep Frying:
- Vegetable oil

Preparation Steps:
For the Dough:
Step 1: In a bowl, mix flour, ghee, and a pinch of salt.
Step 2: Gradually add water and knead to form a smooth, firm dough. Cover and let it rest for 15-20 minutes.
For the Filling:
Step 1: In a pan, heat oil and add cumin seeds and fennel seeds.
Step 2: Add chopped onions and sauté until they become golden brown.
Step 3: Stir in grated ginger, chopped green chilies, red chili powder, turmeric powder, garam masala, and salt. Cook until the spices are well combined with the onions. Remove from heat and let it cool.
Assembling the Kachori:
Step 1: Divide the rested dough into equal-sized portions and roll them into balls.
Step 2: Roll out each ball into a small disc and place a spoonful of the prepared onion filling in the center.
Step 3: Gather the edges of the disc to cover the filling and seal to form a stuffed ball.
Step 4: Gently flatten the stuffed ball and roll it out into a round disc.
For Deep Frying:
Step 1: Heat vegetable oil in a deep pan for frying.
Step 2: Carefully slide the rolled-out kachori into the hot oil.
Step 3: Fry until the kachori puffs up and turns golden brown, flipping it to ensure even cooking.
Step 4: Remove from the oil and place on paper towels to absorb excess oil.
Step 5: Serve Pyaaz Ki Kachori hot with chutney or yogurt.
