Ingredients:

For the Rolls:

  • Rice paper wrappers
  • Cooked and cooled rice noodles (vermicelli)
  • Assorted fresh vegetables (carrots, cucumbers, bell peppers, and avocado), julienned
  • Cooked and sliced protein of your choice (shrimp, chicken, or tofu)
  • Fresh herbs (mint, cilantro, and basil)

For the Dipping Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • Red pepper flakes or Sriracha (optional for heat)

Cooking Steps:

For the Rolls:

Step 1: Prepare all the vegetables and protein, ensuring they are sliced into thin, uniform strips.

Step 2: Fill a shallow dish with warm water. Dip one rice paper wrapper at a time into the water, allowing it to soften for about 10-15 seconds.

Step 3: Place the softened rice paper on a clean surface.

Step 4: Arrange a small portion of rice noodles, julienned vegetables, protein slices, and fresh herbs in the center of the rice paper.

Step 5: Fold the sides of the rice paper over the filling, then fold the bottom up and roll tightly.

Step 6: Repeat the process until all the ingredients are used.

For the Dipping Sauce:

Step 7: In a small bowl, whisk together soy sauce, rice vinegar, honey or maple syrup, sesame oil, and red pepper flakes or Sriracha if desired.

Step 8: Adjust the sauce to your taste preference.

Step 9: Serve the Easter Egg Rolls with the dipping sauce on the side.
