Guyanese Curry Chicken
Ingredients:
- 2 pounds chicken, cut into pieces
- 2 tablespoons curry powder
- 1 teaspoon turmeric powder
- 1 tablespoon cumin powder
- 1 tablespoon coriander powder
- 1 teaspoon chili powder (adjust to taste)
- Salt and black pepper to taste
- 3 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tomatoes, chopped
- 1 cup coconut milk
- 1 cup chicken broth
- 1 large potato, peeled and diced
- Fresh cilantro or parsley for garnish
Cooking Steps:
Step 1: In a bowl, combine curry powder, turmeric powder, cumin powder, coriander powder, chili powder, salt, and black pepper to create the curry spice mix.
