Ingredients:

For the Cake:

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups whole milk

For Coloring the Layers:

  • Gel food coloring (red, orange, yellow, green, blue, purple)

For Cream Cheese Frosting:

  • 1 cup unsalted butter, softened
  • 16 oz cream cheese, softened
  • 8 cups powdered sugar
  • 2 teaspoons vanilla extract

Cooking Steps:

For the Cake:

Step 1: Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

Step 2: In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

Step 3: In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.

Step 4: Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

Step 5: Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

For Coloring the Layers:

Step 6: Divide the batter evenly into six bowls.

Step 7: Add gel food coloring to each bowl to create the colors of the rainbow (red, orange, yellow, green, blue, purple). Mix well until the colors are vibrant.

Step 8: Pour each colored batter into individual prepared cake pans.

Step 9: Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Step 10: Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

For Cream Cheese Frosting:

Step 11: In a large bowl, beat together softened butter, cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

Assembly:

Step 12: Place the purple layer on a serving plate or cake stand. Spread a thin layer of cream cheese frosting on top.

Step 13: Stack the remaining colored layers, spreading frosting between each layer.

Step 14: Frost the entire cake with the remaining cream cheese frosting, covering the top and sides.

Step 15: Optional: Decorate the Rainbow Cake with additional colorful sprinkles or decorations.
