No Sugar Protein Energy Barfi & Laddu Balls
Ingredients:
For Protein Energy Barfi:
- 1 cup mixed nuts (almonds, cashews, walnuts), finely chopped
- 1/2 cup unsweetened protein powder (flavor of your choice)
- 1/2 cup desiccated coconut
- 1/4 cup nut butter (almond, peanut, or cashew)
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- A pinch of salt
For Laddu Balls:
- 1 cup rolled oats
- 1/2 cup protein powder (flavor of your choice)
- 1/2 cup nut butter (almond, peanut, or cashew)
- 1/4 cup honey or maple syrup
- 1/4 cup chopped nuts or seeds (e.g., almonds, chia seeds)
- 1 teaspoon vanilla extract
- Shredded coconut or sesame seeds for coating (optional)
Cooking Steps:
For Protein Energy Barfi:
Step 1: In a mixing bowl, combine finely chopped mixed nuts, protein powder, desiccated coconut, nut butter, melted coconut oil, vanilla extract, and a pinch of salt.
Step 2: Mix until well combined and forms a thick, dough-like consistency.
Step 3: Press the mixture into a lined pan and refrigerate for at least 1-2 hours until set.
Step 4: Once set, cut the mixture into Barfi squares.
For Laddu Balls:
Step 5: In a food processor, blend rolled oats until they form a coarse powder.
Step 6: In a mixing bowl, combine the oats powder, protein powder, nut butter, honey or maple syrup, chopped nuts or seeds, and vanilla extract.
Step 7: Mix until a sticky dough forms.
Step 8: Scoop small portions of the mixture and roll them into bite-sized balls.
Step 9: Optionally, coat the Laddu Balls with shredded coconut or sesame seeds.
Step 10: Refrigerate the Laddu Balls for at least 1 hour to enhance the flavors and texture.
