Tender Coconut Jelly Pudding
Ingredients:
- 1 cup tender coconut water
- 1 cup tender coconut flesh, finely chopped
- 1 packet (about 7g) unflavored gelatin
- 1/2 cup sugar (adjust to taste)
- 1 cup coconut milk
- 1/2 cup condensed milk
- 1 teaspoon vanilla extract
- A pinch of salt
- Fresh tender coconut slices for garnish (optional)
Cooking Steps:
Step 1: In a bowl, combine tender coconut water and unflavored gelatin. Let it sit for a few minutes to allow the gelatin to bloom.
Step 2: In a saucepan, heat the bloomed gelatin mixture over low heat until it completely dissolves. Stir in sugar until dissolved. Remove from heat.
Step 3: In a blender, combine tender coconut flesh, coconut milk, condensed milk, vanilla extract, and a pinch of salt. Blend until smooth.
Step 4: Add the gelatin mixture to the blended coconut mixture and blend again until well combined.
Step 5: Pour the mixture into molds or serving glasses. Chill in the refrigerator for at least 4 hours or until the pudding is set.
Step 6: Once set, garnish with fresh tender coconut slices if desired.
