Tender Coconut Jelly Pudding


  • 1 cup tender coconut water
  • 1 cup tender coconut flesh, finely chopped
  • 1 packet (about 7g) unflavored gelatin
  • 1/2 cup sugar (adjust to taste)
  • 1 cup coconut milk
  • 1/2 cup condensed milk
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Fresh tender coconut slices for garnish (optional)

Cooking Steps:

Step 1: In a bowl, combine tender coconut water and unflavored gelatin. Let it sit for a few minutes to allow the gelatin to bloom.

Step 2: In a saucepan, heat the bloomed gelatin mixture over low heat until it completely dissolves. Stir in sugar until dissolved. Remove from heat.

Step 3: In a blender, combine tender coconut flesh, coconut milk, condensed milk, vanilla extract, and a pinch of salt. Blend until smooth.
