Cavatelli Pasta, Marinated Tomatoes, & Broccolini
Ingredients:
- 1 pound cavatelli pasta
- 2 cups cherry tomatoes, halved
- 1 bunch broccolini, trimmed
- 3 cloves garlic, minced
- 1/3 cup extra-virgin olive oil
- 1/4 cup balsamic vinegar
- Salt and black pepper to taste
- Red pepper flakes (optional, for a hint of spice)
- Fresh basil leaves for garnish
- Grated Parmesan cheese (optional)
Cooking Steps:
Step 1: Cook the cavatelli pasta according to the package instructions until al dente. Drain and set aside.
Step 2: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
Step 3: Add halved cherry tomatoes to the skillet and cook for 2-3 minutes until slightly softened.
Step 4: Stir in balsamic vinegar, salt, black pepper, and red pepper flakes (if using). Cook for an additional 2-3 minutes until the tomatoes are well-marinated.
Step 5: In a separate pot, blanch the trimmed broccolini in boiling salted water for 2-3 minutes until bright green and slightly tender. Drain and set aside.
Step 6: Add the cooked cavatelli pasta to the skillet with the marinated tomatoes. Toss to coat the pasta in the flavorful tomato mixture.
Step 7: Gently fold in the blanched broccolini, ensuring it's evenly distributed.
Step 8: Serve the Cavatelli Pasta with Marinated Tomatoes and Broccolini hot, garnished with fresh basil leaves and grated Parmesan cheese if desired.
Delight in the perfect balance of flavors and textures in this exquisite pasta dish. The combination of marinated tomatoes and vibrant broccolini adds a fresh twist to the classic comfort of cavatelli pasta. Enjoy!
