Crumbly And Delicious Linzer Cookies

Linzer Cookies are crumbly and delicious treats with a delicate texture and flavorful jam. Made from a mixture of ground hazelnuts, brown sugar, powdered sugar, lemon zest, cinnamon, cloves, flour, and butter, these cookies are baked to a golden brown. They are then sandwiched with raspberry jam and dusted with powdered sugar. Perfect for festive tea parties or as a sweet gift, Linzer Cookies are sure to delight.

Ingredients:

  • 320g (3 1/4 cups) of ground hazelnuts
  • 140g (3/4 cup) of brown sugar
  • 110g (1 cup) of powdered sugar
  • Lemon (zest)
  • Cinnamon
  • Cloves
  • 320g (2 3/4 cups) of all-purpose flour
  • 270g (1 3/4 cups) of butter
  • 1 egg
  • 1 egg yolk
  • Raspberry jam
  • Powdered sugar

Method:

  1. In a mixing bowl, add the ground hazelnuts, brown sugar, powdered sugar, lemon zest, cinnamon, and cloves, and mix. Add the egg and egg yolk and mix with your fingers until combined. When dough starts to form, knead to obtain a compact dough. Wrap the dough in cling film and transfer it to the fridge for 2 hours.
  2. After the time has elapsed, transfer the dough to the working surface and roll out the dough to 3-4 mm thick. Cut out the shapes of the cookies with the cookie cutter.
  3. Transfer the cookies to a baking tray covered with parchment paper. Bake in the oven at 180°C/360°F for 12 minutes.
  4. Let the cookies cool. Spread raspberry jam on the non-pierced bases and cover with the top shape. Serve and decorate with powdered sugar.
