Ingredients
For the whipped shortcrust pastry:
- 3 egg yolks
- 2 egg whites
- 250g of butter
- 250g of powdered sugar
- 370g of "00" flour
- 20g of potato starch
- a pinch of salt
- grated zest of one lemon
- red fat-soluble food coloring, as needed
Icing for decoration:
- 1 egg white
- 125g of powdered sugar
Preparation
- whip the softened butter with the powdered sugar until you get a light and fluffy mixture.
- gradually add the room-temperature eggs.
- incorporate the sifted flour, and the dough is ready.
- take a portion of the dough and add red food coloring to make the hat.
- transfer the mixtures into two piping bags with a star tip.
- shape the cookies and bake at 170°C for about 15 minutes. the cookies should be cooked but still light in color.
- after cooling, decorate them with royal icing or chocolate.
- let the decorations dry and serve these delicious cookies, which are also perfect for gifting!
