Ingredients

For the whipped shortcrust pastry:

  • 3 egg yolks
  • 2 egg whites
  • 250g of butter
  • 250g of powdered sugar
  • 370g of "00" flour
  • 20g of potato starch
  • a pinch of salt
  • grated zest of one lemon
  • red fat-soluble food coloring, as needed

Icing for decoration:

  • 1 egg white
  • 125g of powdered sugar

Preparation

  1. whip the softened butter with the powdered sugar until you get a light and fluffy mixture.
  2. gradually add the room-temperature eggs.
  3. incorporate the sifted flour, and the dough is ready.
  4. take a portion of the dough and add red food coloring to make the hat.
  5. transfer the mixtures into two piping bags with a star tip.
  6. shape the cookies and bake at 170°C for about 15 minutes. the cookies should be cooked but still light in color.
  7. after cooling, decorate them with royal icing or chocolate.
  8. let the decorations dry and serve these delicious cookies, which are also perfect for gifting!
