Apple Muffins: Soft and Fast!
Apple muffins are a delightful treat that combines the sweetness of apples with a hint of cinnamon. These muffins are quick and easy to make, perfect for breakfast or as a snack. Follow this simple recipe to bake soft and delicious apple muffins in no time!
Ingredients
- 2 eggs
- 110g (1/2 cup) of sugar
- 60ml (1/4 cup) of vegetable oil
- 160g (1 1/4 cups) of all-purpose flour
- 8g (3/4 tbsp) of baking powder
- Cinnamon
- 2 apples
- 1 lemon (juice)
- Powdered sugar
Method
- In a bowl, add the eggs and sugar and mix with the electric mixer until frothy. Add the vegetable oil, flour, baking powder, and cinnamon and mix to obtain a smooth mixture without lumps.
- Peel and slice the apples into small pieces and transfer them to another bowl. Add the lemon juice, mix, and set aside.
- Place the paper cups in the muffin pan, scoop the mixture, and pour it into the cups.
- Place the apple slices on top of the muffins and transfer them to the oven. Bake at 180°C/360°F for 20 minutes.
- Serve the apple muffins on a serving dish and decorate with powdered sugar.
