Apple Muffins: Soft and Fast!

Apple muffins are a delightful treat that combines the sweetness of apples with a hint of cinnamon. These muffins are quick and easy to make, perfect for breakfast or as a snack. Follow this simple recipe to bake soft and delicious apple muffins in no time!

Ingredients

  • 2 eggs
  • 110g (1/2 cup) of sugar
  • 60ml (1/4 cup) of vegetable oil
  • 160g (1 1/4 cups) of all-purpose flour
  • 8g (3/4 tbsp) of baking powder
  • Cinnamon
  • 2 apples
  • 1 lemon (juice)
  • Powdered sugar

Method

  1. In a bowl, add the eggs and sugar and mix with the electric mixer until frothy. Add the vegetable oil, flour, baking powder, and cinnamon and mix to obtain a smooth mixture without lumps.
  2. Peel and slice the apples into small pieces and transfer them to another bowl. Add the lemon juice, mix, and set aside.
  3. Place the paper cups in the muffin pan, scoop the mixture, and pour it into the cups.
  4. Place the apple slices on top of the muffins and transfer them to the oven. Bake at 180°C/360°F for 20 minutes.
  5. Serve the apple muffins on a serving dish and decorate with powdered sugar.
