1. Pulled Pork Nachos

Ingredients
for 10 nachos

PULLED PORK

2 lb pork shoulder
¼ cup brown sugar
1 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne pepper
1 teaspoon kosher salt
1 teaspoon black pepper
1 red onion, medium, quartered
¼ cup ketchup
¼ cup mustard
TOPPINGS

tortilla chips, to taste
red onion, to taste
BBQ sauce, to taste
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
diced tomato, to taste
sour cream, to taste
salsa, to taste
cilantro, to taste

Preparation

Place pork, onion, and seasonings into a 6-quart slow cooker. Mix to coat meat in seasonings.
Add ketchup and mustard, spreading evenly over the outside of the meat.
Set slow cooker to High and cook for 4 hours, until the meat pulls apart easily. Alternatively, the meat can be cooked on the Low setting for 8 hours.
Remove meat from slow cooker and transfer it to a bowl or cutting board. Using two forks, shred the meat into bite-sized pieces.
Preheat oven to 400˚F (200˚C).
Using a cast-iron pan or other oven-safe dish, assemble the nachos layer by layer. Chips, then pork, onion, BBQ sauce, and cheese. Repeat as desired for additional layers.
Bake for 8-10 minutes until cheese is melted and bubbling.
Top with sour cream, salsa, and cilantro.

2. Bacon-wrapped Burger Ring

Ingredients
for 8 servings

BURGER

2 lb ground beef
¼ cup worcestershire
¼ cup dijon mustard
½ tablespoon salt
½ tablespoon pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 lb bacon, cut in half
8 rolls
1 cup lettuce, chopped
1 tomato, sliced
FONDUE

1 ½ cups milk, divided
2 tablespoons flour
½ teaspoon salt
1 cup shredded cheddar cheese
½ teaspoon pepper
½ teaspoon garlic powder
½ teaspoon onion powder
½ cup green chilli
¼ cup dijon mustard

Preparation

Preheat oven to 375˚F (190˚C).
In a bowl, add the ground beef, worcestershire sauce, Dijon mustard, salt, pepper, onion powder, and garlic powder. Mix to combine.
Transfer to a wire rack on a sheet pan. Create a ring shape with the meat mixture, gently pressing it flat until it’s 2 inches (5 cm) thick.
Place each piece of bacon around the meat ring tucking the bacon underneath.
Bake for 20 minutes, then broil 15-20 minutes on high heat until bacon is crisp.
In a saucepan, add ½ cup (120 ml) of milk and flour on medium heat, whisking until thickened and pulling away from pan.
Pour in the rest of the milk and add the salt, stir until bubbling and thickened about 5 minutes. Remove from heat.
Stir in cheese, pepper, garlic powder, onion powder, green chilies, and Dijon mustard. Transfer to a ramekin or bowl. Set aside.
Arrange the bottom rolls in a circle. Place meat ring on top of buns. Add lettuce and tomato on top of the meat ring then place the top part of the buns around the top of the meat ring.
Place fondue in the center of the meat ring. Slice and serve immediately.

3. Oven-baked BBQ Baby Back Ribs

Ingredients
for 4 servings

1 rack baby back rib, halved
2 teaspoons salt
1 teaspoon black pepper
2 teaspoons paprika
1 teaspoon cayenne pepper
2 teaspoons dried oregano
¼ cup brown sugar
1 cup BBQ sauce
1 lb green bean

Preparation

Preheat oven to 275˚F (140˚C).
Season the ribs with salt, black pepper, paprika, cayenne pepper, oregano, and brown sugar. Rub in the seasonings evenly on both sides.
Place the ribs on a baking sheet lined with foil. Cover the ribs with foil.
Bake for 2 hours.
Increase the oven temperature to 500˚F (260˚C).
Carefully uncover the ribs. Spread BBQ sauce evenly on top of the ribs.
Place green beans on the sides of the pan. Season the green beans with salt.
Bake for 10 minutes.
Transfer the ribs to a cutting board.
Cut between the bones to separate into individual ribs. Serve with green beans.

Ingredients
for 4 servings

2 lb chicken wings, pat dry
¾ cup cornstarch, divided
¼ cup flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon cayenne pepper
2 teaspoons baking powder
1 teaspoon black pepper
2 teaspoons salt
⅔ cup water
oil, for frying
½ cup buffalo sauce

Preparation

In a bowl, toss ¼ cup (30g) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and rest for 20 minutes.
In a mixing bowl, whisk together the remaining cornstarch, flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper.
Gradually whisk in water, breaking up any lumps, mixing until smooth. The batter should be slightly runny.
Coat chicken wings in the batter, shaking off any excess.
Heat oil in a pot to 350°F (180°C).
Add the wings in batches, cooking for 8-10 minutes, until golden brown.
Once chicken is cooked, transfer to a on a wire rack set on top of a paper towel-lined sheet pan.
Transfer chicken to a clean bowl, and drizzle with top buffalo sauce, tossing to coat wings.
Transfer to a serving plate, serve with either ranch or blue cheese dressing and celery sticks.

5. Carne Asada Fries

Ingredients
for 2 servings

OVEN-BAKED FRENCH FRIES

2 russet potatoes
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon paprika
CARNE ASADA

½ lb flank steak
1 teaspoon salt
½ teaspoon pepper
1 teaspoon chili powder
½ teaspoon dried oregano
2 cloves garlic, minced
2 tablespoons fresh cilantro, minced
½ cup orange juice, fresh
½ cup lime juice
1 tablespoon canola oil

Preparation

Preheat oven to 450°F (230°C).
Rinse off your potatoes and give them a light scrub to remove any excess dirt. Dry with towel then cut into fries.
In a large mixing bowl, combine potatoes, olive oil, salt, garlic powder, and paprika until each fry is fully coated in all of the spices.
Place fries on a baking sheet lined with parchment paper and bake at 450°F (230°C) for 30-35 minutes or until the fries are crispy and golden brown.
Marinate flank steak with salt, pepper, chili powder, oregano, garlic, cilantro, lime juice, and orange juice for 20 minutes.
Heat up a cast-iron skillet with 1 tablespoon of canola oil.
Place steak in the hot cast-iron skillet and cook for 3 minutes on both sides for a medium cooked steak.
Take steak off the heat and let it rest for 10 minutes before dicing.
In an ovenproof skillet, place baked french fries, pepper jack cheese, and diced carne asada, then broil until the cheese is melted.
Top with sour cream, guacamole, diced tomatoes, cilantro, and cotija cheese.
