1. Carne Asada Fries

Ingredients
for 2 servings

OVEN-BAKED FRENCH FRIES

2 russet potatoes
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon paprika
CARNE ASADA

½ lb flank steak
1 teaspoon salt
½ teaspoon pepper
1 teaspoon chili powder
½ teaspoon dried oregano
2 cloves garlic, minced
2 tablespoons fresh cilantro, minced
½ cup orange juice, fresh
½ cup lime juice
1 tablespoon canola oil

Preparation

Preheat oven to 450°F (230°C).
Rinse off your potatoes and give them a light scrub to remove any excess dirt. Dry with towel then cut into fries.
In a large mixing bowl, combine potatoes, olive oil, salt, garlic powder, and paprika until each fry is fully coated in all of the spices.
Place fries on a baking sheet lined with parchment paper and bake at 450°F (230°C) for 30-35 minutes or until the fries are crispy and golden brown.
Marinate flank steak with salt, pepper, chili powder, oregano, garlic, cilantro, lime juice, and orange juice for 20 minutes.
Heat up a cast-iron skillet with 1 tablespoon of canola oil.
Place steak in the hot cast-iron skillet and cook for 3 minutes on both sides for a medium cooked steak.
Take steak off the heat and let it rest for 10 minutes before dicing.
In an ovenproof skillet, place baked french fries, pepper jack cheese, and diced carne asada, then broil until the cheese is melted.
Top with sour cream, guacamole, diced tomatoes, cilantro, and cotija cheese.

2. Baked Chicken Fries

Ingredients
for 4 servings

4 boneless, skinless chicken breasts
2 cups plain breadcrumb
1 cup flour
5 eggs, beaten
1 teaspoon salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon pepper

Preparation

Preheat oven to 375˚F (190˚C).
Slice chicken breast in half, and cut into thin strips about the thickness of a french fry.
Season bread crumbs with salt, garlic powder, onion powder, paprika, dried basil, dried oregano, and pepper. Mix well.
Dredge chicken strips in the flour first, then cover in egg, and coat with bread crumbs.
Place on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway.

3. Baked Sweet Potato Fries

Ingredients
for 1 serving

2 large sweet potatoes
water, for soaking
2 tablespoons corn starch
1 tablespoon olive oil, or vegetable oil
½ teaspoon pepper
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon brown sugar
salt, to taste
shredded parmesan cheese, optional
fresh parsley, optional, chopped

Preparation

Rinse and peel sweet potatoes.
To cut into fries, cut a small sliver off the edge of the potatoes lengthwise to create a flat side for them to rest on. Turn the potato over to lay on its flat side. Cut each slice lengthwise into three to four fries.
Place the fries in a bowl of water and soak for one hour. (This helps remove excess starch from the potatoes so your fries will be crispier.) Rinse and dry off.
Preheat the oven to 425°F (220°C).
In a large bowl or gallon bag, toss the fries with cornstarch until they’re evenly coated. Then add the oil and toss to coat.
Add the pepper, paprika, garlic powder, and brown sugar and toss to evenly distribute your spices. (Hold off on adding the salt until after baking. This will help make sure the fries are crispy.)
Line a baking sheet with parchment paper or aluminum foil and spray with nonstick cooking spray. Lay out the french fries, being sure not to overcrowd the pan. (You may need two pans, depending on how large your pans are. Avoid overcrowding one pan or your fries may not crisp up.)
Bake for 15 minutes. Flip fries with tongs, then bake for an additional 10–15 minutes. Sprinkle on salt (to taste) and serve! Add shredded Parmesan and chopped parsley for an optional garnish.

4. Breakfast Biscuit Fries

Ingredients
for 3 servings

3 strips bacon, chopped
1 cup flour
1 cup chicken stock
1 can biscuit dough
4 breakfast sausages, cooked
⅓ cup shredded cheddar cheese
3 eggs, cooked to your preference
2 teaspoons , chopped
pepper, to taste

Preparation

Fry bacon until browned and crispy, render out as much fat as possible. Remove the crispy bacon and set aside for later use. Keep the bacon fat which will be used to make the gravy.
Make the bacon gravy in the same pan that you fried the bacon. Add flour to the pan and stir until flour forms thick paste. Cook for about a minute without burning the flour.
Slowly stir in the chicken stock. Keep stirring until you have a smooth consistency. Simmer until the sauce thickens. Keep warm and set aside.
Flatten biscuit dough and cut into strips. Deep fry (oil at 350°F (175°C)) until brown and crispy. Drain on paper towels, and place on baking sheet. Repeat with remaining biscuit dough.
Layer the fried biscuit dough on the baking sheet. Sprinkle the cooked breakfast sausage, fried bacon, shredded cheddar and top with eggs. Pepper to taste.
Broil for 5 - 10 minutes or until the shredded cheddar has melted.
Remove from oven, sprinkle on the chopped chives and drizzle on the bacon gravy.

Ingredients
for 4 serrvings

400 g (14 oz) frozen fry, thawed
3 tablespoons olive oil, for frying
1 tablespoon butter, for frying
1 tablespoon ginger garlic paste
½ onion, diced
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon coriander powder
½ teaspoon salt
1 tablespoon lemon juice, 1/2 lemon
100 g (½ cup) tomato, chopped
natural yogurt, to garnish
coriander, to garnish

Preparation

Preheat oven to 180°C (350°F).
Spread out the fries on a baking tray and bake for 20 minutes.
While the fries are baking, prepare the masala.
Heat a large skillet over medium heat and add the oil and butter.
Stir in the ginger garlic paste and fry for a couple of minutes.
Add the onion and fry for a few minutes until soft.
Sprinkle in the chili powder, ground cumin, ground coriander, salt, and lemon juice and stir continuously for another minute.
Pour in the chopped tomatoes and fry for several more minutes, until the sauce has thickened.
Add the fries to the pan and stir until evenly coated.
Drizzle some yogurt on top and garnish with fresh coriander.

Ingredients
for 2 servings

2 russet potatoes
3 tablespoons canola oil
½ tablespoon salt
½ tablespoon pepper

½ tablespoon cumin
½ tablespoon garlic powder

Preparation

Preheat oven to 450°F (230°C).
Using a spiralizer, spiralize the potatoes.
Spread the potatoes evenly in one single layer on a baking sheet.
Drizzle the oil over the potatoes and sprinkle with salt, pepper, paprika, cumin, garlic powder, and chili powder.
Bake for 25-30 minutes until crispy.

7. BBQ Pulled Pork Fries

Ingredients
for 4 servings

8 medium russet potatoes
2 lb pork shoulder
3 tablespoons olive oil
1 tablespoon salt
1 tablespoon pepper
2 cups BBQ sauce
½ red onion, sliced
1 cup shredded pepper jack cheese
½ cup scallion, sliced
1 cup shredded cheddar cheese
½ cup sour cream

Preparation

Preheat oven to 425°F (220°C).
Slice the potatoes into ½-inch (1cm) slices, then cut the slices into ½-inch (1cm) strips.
Place the sliced potatoes on a baking sheet along with the pork shoulder. Make sure that the potatoes are not touching the pork.
Drizzle the olive oil over the potatoes, then sprinkle the pork and the potatoes with the salt and pepper, rubbing them in so that they are all coated evenly. Cover the pork with one cup (286g) of the barbecue sauce, then rub it evenly on all sides. Bake for 45 minutes.
Remove the fries, then place the pork in the center of the tray. Bake for another two hours.
Transfer the pork to a large bowl, and using two forks, shred the pork. Combine the pulled pork with the remaining one cup (286g) of barbecue sauce.
In a skillet or a baking tray, layer half of the fries, half of the bbq pork, half of the red onion, the pepper jack, half of the scallions, then repeat with the remaining fries, pork, red onion, cheddar, and scallions. Bake for 15 minutes, until cheese is melted.
Serve with sour cream.
