8 Amazing Veggie Burgers

1. Sweet Potato Chickpea BBQ Veggie Burgers

Ingredients
for 5 servings

15 oz chickpea, 1 can, drained and rinsed
1 sweet potato, medium-sized, cooked
1 clove garlic, minced
1 teaspoon chili powder
½ teaspoon salt
¼ cup BBQ sauce
¼ cup cornmeal
¼ cup scallions, chopped
BARBECUE SAUCE

6 oz tomato paste
¼ cup water
2 tablespoons pure maple syrup
2 tablespoons apple cider vinegar
½ teaspoon chili powder
½ teaspoon garlic powder
¼ teaspoon salt

Preparation

1. Preheat oven to 375˚F (190˚C).
2. In a large bowl, microwave chickpeas for 1 minute, or until softened.
3. Peel the cooked sweet potato, and add it to the bowl of chickpeas, along with the garlic, chili powder, and salt. Mash until chickpeas are finely mashed. Add cornmeal and scallions, and set aside.
4. For the barbecue sauce: In a medium-size bowl, combine tomato paste, water, maple syrup, apple cider vinegar, chili powder, garlic powder, and salt. Mix to combine.
5. Add barbecue sauce to the mashed chickpea mixture and mix until thoroughly combined.
6. Using a ½ cup (120 ml) measuring cup, portion 5 patties from the mixture. Place onto a lightly greased parchment-lined sheet pan.
7. Bake for 40 minutes, or until firm and browned, flipping over halfway through.
8. Serve with the remaining barbecue sauce and favorite fixins.

2. Portobello Veggie Burgers

Ingredients
for 5 servings

15 oz black bean, 1 can, drained and rinsed
½ teaspoon salt
1 clove garlic, minced
2 large portobello mushroom caps, finely chopped
½ cup , finely chopped
¼ cup parsley, finely chopped
2 tablespoons ground flaxseed
4 tablespoons water

Preparation

1. Preheat oven to 375˚F (190˚C).
2. In a large bowl, microwave black beans for 1 minute, or until softened.
3. Add salt and garlic. Mash until black beans are finely mashed.
4. Add mushrooms, walnuts, and parsley.
5. In a small bowl, mix ground flax and water and stir until thoroughly combined.
6. Add flax mixture to the mushroom mixture and mix thoroughly.
7. Using a ½ cup (120 ml) measuring cup, portion 5 patties from the mixture. Place onto a lightly greased parchment-lined sheet pan.
8. Bake for 30 minutes, or until firm and browned, flipping over halfway through.
9. Serve burgers with your favorite fixins.

Ingredients
for 5 servings

15 oz black bean, 1 can, drained and rinsed
½ cup jarred roasted red pepper, finely chopped
1 clove garlic, minced
¼ teaspoon cayenne pepper
½ teaspoon cumin
½ teaspoon salt
¼ cup cornmeal

Preparation

1. Preheat oven to 375˚F (190˚C).
2. In a large bowl, microwave black beans for 1 minute, or until softened.
3. Add roasted red peppers, garlic, cayenne, cumin, and salt. Mash until black beans are finely mashed.
4. Add cornmeal and mix until thoroughly combined.
5. Using a ½ cup (120 ml) measuring cup, portion 5 patties from the mixture. Place onto a lightly greased parchment paper-lined sheet pan.
6. Bake for 30 minutes, or until firm and browned, flipping over halfway through.

Ingredients
for 5 servings

1 cup sunflower seed
¼ cup yellow onion, finely chopped
1 cup brown rice, cooked
½ teaspoon dried thyme
½ teaspoon salt
2 tablespoons water
1 cup carrot, chopped
½ cup celery, chopped

Preparation

1. Preheat oven to 375˚F (190˚C).
2. In the bowl of a food processor, add sunflower seeds. Process until finely ground.
3. Add onion, brown rice, thyme, salt, and water and process until combined.
4. Add carrot and celery and pulse several times to combine.
5. Using a ½ cup (120 ml) measuring cup, portion 5 patties from the mixture. Place onto a lightly greased parchment-lined sheet pan.
6. Bake for 30 minutes, or until firm and browned, flipping over halfway through.
7. Serve burgers with your favorite fixins.

5. Black Bean & Corn Burgers

Ingredients
for 4 servings

15 oz black bean, 1 can, drained, rinsed
½ cup brown rice, cooked
1 cup corn
½ teaspoon garlic powder
1 teaspoon chili powder
1 egg
salt, to taste
black pepper, to taste
⅓ cup seasoned bread crumbs
canola oil
4 slices pepper jack cheese
tomato
red onion
avocado
pico de gallo

Preparation

1. In a large bowl, add black beans, rice, corn, seasonings, and egg. 2. Using a potato masher, mash the ingredients until thoroughly mixed together.
3. Once mashed, add the bread crumbs and mix to combine.
4. Take a quarter of the mixture and shape it into a patty using your hands. Repeat with the remaining mixture to create four patties.
5. In a pan, heat a small amount of oil over medium heat. Add the patties and cook for 4-5 minutes, flip, top with a slice of pepper jack, and cook for another 4-5 minutes.
6. Place patties on buns, and top with sliced tomato, red onion, avocado, and fresh salsa.

6. Cauliflower & Chickpea Burgers
Ingredients
for 4 servings

1 head cauliflower
1 teaspoon salt
15 oz chickpea, 1 can, drained, rinsed
1 small onion, finely chopped
1 red bell pepper, finely chopped
1 clove garlic, minced
⅓ cup fresh cilantro, finely chopped
1 teaspoon turmeric
½ teaspoon cumin
salt, to taste
black pepper, to taste
HUMMUS

1 tomato, sliced

Preparation

1. Preheat oven to 350˚F/180˚C.
2. Place a towel over a large bowl. Using a box grater, grate the head of cauliflower down to the stem over the bowl. Add the salt to the cauliflower, mix it in, and allow it to sit for 20 minutes. After 20 minutes, use the towel to wring out the excess water from the cauliflower and return it to the bowl.
3. Add the chickpeas, onion, bell pepper, garlic, cilantro, and spices to the cauliflower. Using a potato masher, mash the ingredients until thoroughly mixed together.
4. Take a quarter of the mixture and shape it into a patty using your hands. Repeat with the remaining mixture to create four patties.
5. Take the patties and place them on a parchment paper-lined baking sheet and bake for 20 minutes.
6. Place patties on buns, and top with hummus, lettuce, tomato, and pickles.

7. Quinoa Pizza Burgers

Ingredients
for 4 servings

1 cup , cooked
15 oz pinto bean, 1 can, drained, rinsed
¼ cup tomato paste
1 tablespoon dried oregano
1 teaspoon garlic powder
salt, to taste
black pepper, to taste
4 slices mozzarella cheese
shredded parmesan cheese
fresh basil
tomato sauce

Preparation

1. Preheat oven to 400˚F/200˚C.
2. In a large bowl add the quinoa, beans, tomato, paste, and seasonings. Using a potato masher, mash the ingredients until thoroughly mixed together.
3. Take a quarter of quinoa-bean mixture and shape it into a patty using your hands. Repeat with the remaining mixture to create four patties.
4. Place the patties on a parchment paper-lined baking sheet. Top with mozzarella, and bake for 12-15 minutes.
5. Place the patties on buns, and top with tomato sauce, shredded Parmesan, and fresh basil.

Ingredients
for 4 servings

1 medium sweet potato, roasted, peeled
15 oz white bean, 1 can, drained, rinsed
1 small onion, finely chopped
1 teaspoon garlic powder
1 teaspoon red pepper flakes
⅓ cup nutritional yeast
⅓ cup fresh parsley, finely chopped
1 tablespoon lemon juice
½ cup seasoned bread crumbs
salt, to taste
black pepper, to taste
canola oil
chipotle mayo
1 red onion, sliced
1 avocado, sliced

Preparation

1. Preheat oven to 350˚F/180˚C.
2. In a large bowl, add the roasted sweet potato, white beans, onion, parsley, lemon juice, and seasonings.
3. Using a potato masher, mash the ingredients until thoroughly mixed together.
4. Once mashed, add the bread crumbs and mix them in.
5. In a pan, heat a small amount of oil over medium heat. Add the patties and cook for 3 minutes on each side. Transfer to a parchment paper-lined baking sheet and bake for 10 minutes.
6. Place patties on buns, and top with chipotle mayo, avocado, and red onion.
