for the shrimp frying:

- pot of refined sesame seed oil

- 3-5 tbsp toasted sesame seed oil for flavor

- shrimps

batter:

- 100g cake flour

- 200ml ice-cold water

- 1 egg yolk

- some ice cubes

Tempura dipping sauce (Tentsuyu)

- 400 ml primary dashi (400ml water + konbu + katsuobushi)

- 66g mirin

- 53g soy sauce

- katsuobushi

- daikon
