Soy Sauce Braised Hainanese Noodles

OPEN for ingredients! Mee Hailam (Hailam Noodles / Hainanese Noodles) is a classic Singapore and Malaysian noodle dish of springy hokkien noodles braised in dark soy sauce and oyster sauce. The resulting dish is a saucy, silky smooth plate of noodles that is delicious and done in just 15 minutes!

This is served with pickled green chillies too, which I included in this recipe as well.

Ingredients:

- 1 packet or 450g fresh Hokkien Noodles
- 1 medium bulb Onion or 2 tbsps chopped onions
- 1-inch Ginger, sliced or 1 tsp minced ginger
- 2-3 cloves Garlic, minced or 2 tsps minced garlic
- 300g Proteins of Choice:
- 100g Fishcakes/fishballs, sliced
- 100g Squid, sliced
- 100 g Prawns (peeled, deveined)
- 4-5 stalks of Chye Sim (or your favourite leafy vegetables)
- 3-4 Baby Corn
- 2 Red Chillies, sliced
- 2 tbsps Oyster Sauce
- 3 tbsps Dark Soy Sauce (Kicap Manis)
- 1 tbsp Light Soy Sauce
- 1/2 tsp Ground \White Pepper
- 2 cups Water
- 1/2 Chicken Stock Cube
- Cornstarch Slurry (2 tbsps cornstarch + 1/2 water)

Garnish:

- Fried Shallots
- Spring Onions

Pickled Green Chillies

- 150g Green Chillies
- 1 cup Vinegar
- 1 tsp Salt
- 1 tsp Sugar
