Ayam Masak Merah and Easy Nasi Minyak

Ingredients:

Ayam Masak Merah:

- 5-600g Chicken, or 1/2 a Chicken
- 1 tsp Turmeric Powder
- 1 tsp Salt
- 2-4 Tomatoes, chopped
- 1 tbsp Tomato Puree
- 2 tsps Sugar, or to taste
- 2 tsps Salt, or to taste
- 1/4 cup of oil for frying
- 2 cups Water

Rempah Base Paste to Blend together:

- 10g or about 10 Dried chilies, soaked in boiling water
- 3-4 Shallots
- 2 Garlic cloves
- 1 inch Ginger
- 1 Lemongrass, inner core, sliced
- 1/4 cup Water for easier blending

Dry Whole Spices:

- 1 Cinnamon Stick
- 2 Star Anise
- 3-4 Cloves
- 4-5 Cardamoms

Nasi Minyak:

- 2 cups of Basmati Rice
- 2 cups of Water (adjust according to what your rice cooker needs)
- 1 tbsp Ghee or Clarified Butter
- 1 tbsp Neutral Tasting Oil
- 3 cloves Garlic, pureed or grated
- 1/2 inch Ginger, pureed or grated
- 1 tsp Salt
- 1 Cinnamon
- 1 Star Anise
- 4-5 Cloves
- 4-5 Cardamom

Garnish:

- Fried shallots
- Cilantro
