Chocolate Oatmeal Muffins


Muffin Baking Pan ( 6 Cup)1 cup Height : 1.4 in, diameter : 2. in

  • 100g Chocolate(Cacao 72%)
  • 50g Coconut oil
  • 50g Sugar
  • 2Eggs(100g)(room temperature)
  • 40g Soy milk (or Milk)*warm
  • 60g Oatmeal (Quick Oatmeal)
  • 20g Cocoa powder
  • 2g Baking powder

For Toppings:

  • 10g Sliced almonds


Line muffin mold with glassine paper.

  1. Put ingredients in a plastic bag and shake well to mix.
  2. Put dark chocolate and Coconut oil in a bowl, microwave at 600W for 1min to dissolve. (or double boil and melt) Preheat the oven to 160°C.
  3. When the chocolate is melted, add sugar, egg, soy milk in order, then mix well.
  4. Add the oatmeal from ① to this chocolate batter and mix.
  5. Put the batter into the Cake Pan and Sprinkle the sliced almonds on the top.
  6. Bake at 160℃(320°F)for 20min.
  7. Remove the cake while it's warm. Let it cool.
