Chocolate Oatmeal Muffins

Ingredients
Muffin Baking Pan ( 6 Cup)1 cup Height : 1.4 in, diameter : 2. in
- 100g Chocolate(Cacao 72%)
- 50g Coconut oil
- 50g Sugar
- 2Eggs(100g)(room temperature)
- 40g Soy milk (or Milk)*warm
- 60g Oatmeal (Quick Oatmeal)
- 20g Cocoa powder
- 2g Baking powder
For Toppings:
- 10g Sliced almonds
Preparation:
Line muffin mold with glassine paper.
- Put ingredients in a plastic bag and shake well to mix.
- Put dark chocolate and Coconut oil in a bowl, microwave at 600W for 1min to dissolve. (or double boil and melt) Preheat the oven to 160°C.
- When the chocolate is melted, add sugar, egg, soy milk in order, then mix well.
- Add the oatmeal from ① to this chocolate batter and mix.
- Put the batter into the Cake Pan and Sprinkle the sliced almonds on the top.
- Bake at 160℃(320°F)for 20min.
- Remove the cake while it's warm. Let it cool.
