Spicy Turai ki Sabji

You've probably used turai more as a loofah than a sabji!! But trust me, once you try this recipe, you will never look at Turai the same way again

Ingredients

  • 2-3 tbsp Ghee
  • 1 tsp Cumin Seeds
  • ½ tsp Fennel Seeds
  • ¼ tsp Asafoetida
  • 3-4 Garlic - chopped
  • 1 inch Ginger - chopped
  • 3 fresh Green Chillies - chopped
  • 2 medium Onion - sliced
  • Salt to taste
  • ½ tsp Turmeric Powder
  • ½ tsp Degi Red Chilli Powder
  • 1 tsp Coriander Powder
  • 3 Ridge Gourd (Turai) - sliced
  • Water
  • 2 medium Tomatoes - chopped
  • 3 tbsp Coriander Leaves - chopped

For Garnish

  • fresh Coriander Leaves

Process

  1. In a kadai heat ghee and add cumin seeds, fennel seeds, asafoetida, ginger, garlic, green chillies and saute for a few seconds.
  2. Now add onion saute until light brown then add salt, turmeric powder, degi red chilli powder, coriander powder and saute them until fragrant.
  3. Then add the ridge gourd (turai) and saute it for a minute now add some water then cover and cook for 6-8 minutes.
  4. Remove the lid and stir it once then add the tomatoes and cook for another minute.
  5. Now finally add coriander leaves and give it a final mix.
  6. Serve hot in a serving bowl and garnish with coriander leaves
