Jiaozi: steamed Chinese dumplings


For the dough: 300g (2 1/2 cups) flour 7g dry yeast 8g (2 tsp) sugar 200ml (3/4 cup + 2 tbsp) water

For the filling: 230g (1/2 lb) ground pork 230g (1/2 lb) ground chicken Garlic 15g (3 tsp) ginger 2 green onions 10ml (1 tbsp) Shaoxing wine 20ml (2 tbsp) oyster sauce 5ml (1 tsp) sesame oil 1g (1/4 tsp) black pepper


  1. Add flour, yeast, sugar, and water to the mixing bowl.
  2. Knead the dough and let it rest for 60 minutes.
  3. Make a filling of minced pork, chicken, garlic, ginger, sesame oil, oyster sauce, pepper, and wine. Divide the dough into 8 parts. Roll out the dough with a rolling pin.
  4. Make dumplings.
  5. Arrange in an oiled pan and pour over with water. Cook until done. Serve.
