Mexican Shrimp Cocktail
Ingredients
• 1 pound shrimp cooked, peeled, and deveined
• 2 roma tomatoes diced
• 1 English cucumber chopped into 1/4" size cubes
• 1/2 cup celery chopped
• 1/4 cup diced red onion
• 1/4 cup chopped cilantro
• 1 large avocado diced when ready to serve
• 1/2-1 jalapeno finely diced
• 2 cloves garlic finely minced
• 2 cups tomato juice
• 1/2 cup ketchup
• 1/4 cup lime juice about 2 limes worth
• 2 tablespoons hot sauce give or take to your liking
• 1 tablespoon prepared horseradish
• 1 teaspoon black pepper
• 1 teaspoon salt
Instructions
- Cook shrimp if needed and place in a large mixing bowl.
- Chop tomatoes, cucumber, celery, onion, cilantro and jalapeño. Add into the bowl with the shrimp, Add in finely minced garlic.
- In a separate mixing bowl, make the juice by adding in tomato juice, ketchup, lime juice, hot sauce, prepared horseradish, pepper and salt. Stir until well combined.
- Pour the sauce mixture over the shrimp and vegetables. Ladle into a fancy cup and enjoy!
