Pancakes stuffed with chocolate
INGREDIENTS
For the batter:
- 2 eggs
- 30g (2 tbsp) sugar
- 200ml (¾ cup + 1 tbsp) milk
- 170g (1 1/4 cups) flour
- 6g (1 1/2 tsp) baking powder
- 5g (1 tsp) vanilla sugar
- Vegetable oil (for greasing)
For the filling:
- dark chocolate
For decoration:
- Powdered sugar
METHOD
- In a bowl whip eggs and sugar until creamy.
- Add milk and flour and beat until smooth.
- Add baking powder and vanilla powder and continue to beat for a minute.
- Transfer the batter into a sauceboat.
- Heat a greased frying pan over medium heat. Pour the batter in the shape of a square or a rectangle. Place a square of dark chocolate in the center of the pancake and cover with some more pancake batter.
- Cook 2-3 minutes or until you see bubbles on top, then flip over and cook on the other side for 1-2 minutes.
- Continue with the remaining pancake batter.
- Serve immediately, decorated with some icing sugar on top.
