Kiwi marshmallow

INGREDIENTS

  • 50ml water
  • 140g kiwi
  • 240g sugar
  • 12g gelatin
  • 5g spirulina
  • Cornstarch
  • Powdered sugar

METHOD

  1. Soak the gelatin sheets in cold water for 10 minutes.
  2. Blend the kiwis and strain them, pour them into a pot, add sugar, water, mix and wait for it to boil.
  3. Add the soaked gelatin leaves and mix.
  4. Pour the mixture into a bowl and beat well until you get a thick white mixture. Add the spirulina and continue mixing.
  5. Mix powdered sugar and cornstarch.
  6. Pour in the kiwi mixture, sprinkle powdered sugar mixture on top and refrigerate for 5 hours. Cut into small squares.
