5 Breakfast Meal Preps For Busy Parents

1. Make-ahead Breakfast Quesadilla
Ingredients
for 12 servings 

2 sausage links
2 eggs
1 flour tortilla, burrito-sized
shredded cheddar cheese

Preparation

  1. In a skillet thoroughly cook the sausage and eggs.
  2. Place mixture in the center of a flour tortilla. Top with cheese, and fold the edges inward to form a sealed pocket.
  3. Heat on a skillet, seam-side down. Flip and cook until golden brown.
  4. Enjoy! Or, freeze up to 1 month.

2. Freezer-prep French Toast Sticks
Ingredients
for 36 sticks 

1 loaf texas toast
7 eggs
1 cup milk
3 tablespoons butter, melted
1 teaspoon vanilla
1 teaspoon cinnamon
2 tablespoons sugar
salt, to taste
cooking spray

Preparation

  1. Preheat oven to 350°F (180˚C).
  2. Spray a large baking sheet with cooking spray.
  3. Stack and slice the Texas toast into thirds.
  4. In a large bowl, whisk together eggs, milk, butter, vanilla, cinnamon, salt, and sugar.
  5. Dunk each strip of bread into the mixture, allow the excess to drip off, then place on prepared baking sheet. Repeat with remaining strips.
  6. Bake for 15-20 minutes, flipping halfway.
  7. Remove from oven and serve.
  8. NOTE: To freeze, let the sticks cool slightly and transfer baking sheet to freezer. Once frozen, after 1-2 hours, transfer to a freezer bag for easy storage.
  9. To reheat, preheat oven to 350°F (180˚C) and bake for 10-15 minutes until heated through. OR transfer frozen sticks to a plate and microwave 45-60 seconds.

4. Strawberry Shortcake Sheet Pan Pancakes
Ingredients
for 4 servings 

4 cups pancake mix
4 eggs
2 cups milk
6 oz cream cheese, cubed
1 cup strawberry, sliced

Preparation

  1. Preheat oven to 425˚F (220˚C).
  2. Pour pancake mix, milk, and eggs into a bowl and mix just until combined.
  3. Pour batter onto a parchment paper-lined baking sheet and spread to the edges.
  4. Place cream cheese on top of the batter, followed by the strawberry slices.
  5. Bake for 15 minutes, or until golden brown.
  6. Cut into squares and serve immediately, or freeze up to 1 month. To reheat, place on a microwave-safe plate and heat for 20 seconds per pancake on the plate.

5. Breakfast Sandwich Meal Prep
Ingredients
for 6 sandwiches 

10 eggs
¾ cup milk, of your preference
½ teaspoon salt
½ teaspoon pepper
½ teaspoon garlic powder
2 cups broccoli floret, chopped
½ red onion, diced
1 red bell pepper, diced
2 slices turkey bacon, or of your preference, cut in half
4 slices deli meat, of your preference
6 whole grain english muffins, sliced
6 slices cheese, of your preference

Preparation

  1. Preheat oven to 375ºF (190ºC).
  2. Spray a 9x13-inch (23x33 cm) baking dish with cooking spray.
  3. In the baking dish, whisk the eggs, milk, salt, pepper, and garlic powder.
  4. Mix in broccoli, red onion, and bell pepper.
  5. Bake until the top starts to get golden brown, about 25 minutes.
  6. Place the deli meat and bacon on a 9x13-inch (23x33 cm) nonstick sheet pan.
  7. Bake 5-10 minutes, or until they reach desired doneness.
  8. Arrange the sliced English muffins on another sheet pan.
  9. Broil for 5-10 minutes, or until they reach desired doneness.
  10. Once your eggs cool, slice into 6 squares.
  11. Cut your parchment paper into 8x8-inch (20x20 cm) squares for each breakfast sandwich.
  12. Lay a moistened paper towel across the parchment and assemble your breakfast sandwiches.
  13. Wrap the assembled sandwich in the moist paper towel first, to ensure freezer freshness and even cooking when microwaved. Wrap in parchment and label.
  14. Store in an airtight plastic bag or container up to one month in the freezer.
  15. When ready to eat, remove the parchment paper and microwave on high for 2-3 minutes. Allow to cool.
